Love Italian food? Are you interested in making pasta? Join us live on Zoom for a virtual class and ESO Artisanal pasta will teach us how to make gnocchi, a relatively easy form of pasta to make using potatoes and flour. Cook along or just watch as AJ, Joel and Isaiah lead us through this process. Along the way, the chefs will answer all of your general questions about making pastas and sauces. The ingredients you’ll need are below and you can purchase them at most large grocery stores. Then after we’re done, you’ll have dinner! You can also contact ESO at esoartisanalpasta@gmail.com or www.esoartisanalpasta.com to purchase a kit at their shop with some of the items you will need to make the gnocchi, such as the “00” flour which might be hard to find at a general grocery store.
- 250g (approx. 9 oz) potato (any kind) boiled in their skins beforehand and cooled
- 130g (approx. 4.5 oz) “00” flour (though a good brand of all-purpose will work)
- 100g (approx. 3.5) Parmigiano Reggiano cheese
- 120g (approx. 4.25 oz) ricotta cheese – any kind
- 50g (approx. 1.75 oz) egg whites
- Nutmeg

OUR PRESENTERS: ESO Artisanal Pasta is a pasta shop in Morristown specializing in fresh pastas and sauces sold with instructions to prepare at home. AJ Sankofa, on the left, is the Executive Chef, Joel Camarillo-Diaz in the middle is the General Manager, and Isaiah Findley-Pinnock on the right is the Operations Manager. All three owners graduated from Morristown High School and worked at Jockey Hollow Bar and Kitchen for several years. It was within the wondrous walls of the Vail Mansion that the seeds for ESO were planted.
